You can try these delicious Weight Watchers soup recipes, such as the Ferrare Carrot Soup and Hashbrown Potato Soup to add variation to your WW diet.

Weight Watchers Soup Recipes - Weight Watchers Garden Vegetable Soup

Weight Watchers points: 0 (actually rounded to zero, so this adds up when eaten on larger amounts)

2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves
3 cup broth (beef, chicken, or vegetable)
1 1/2 cup diced green cabbage
1/2 cup green beans
1 Tbsp. tomato paste
1/2 tsp. dried basil
1/4 tsp. dried oregano
1/4 tsp. salt
1/2 cup diced zucchini

How to prepare the Garden Vegetable Soup:

In a saucepan, use nonstick cooking spray, saute carrot, onion, and garlic over low heat until softened (about 5 minutes).

Add broth, cabbage, beans, tomato paste, basil, oregano, and salt. Bring to a boil.

Lower heat and simmer, covered about 15 minutes or until beans are tender.

Stir in the zucchini and heat about 3-4 minutes.

Weight Watchers Soup Recipes - Weight Watchers Taco Soup

Weight Watchers points: 2 per cup

Ingredients:

1 lg onion
1 pkg. taco seasoning mix
2 cups whole kernel corn
1 can chicken broth
1 can black beans
1 can white beans
1 can fat-free refried beans
1 can diced tomatoes (rotel or mexican flavor)
1 can diced tomatoes (any flavor)

How to prepare the Weight Watchers Taco Soup:

Saute onions. Take out a pot and begin by putting the 2 cans of tomatoes in with the refried beans add all the other cans and the onions. (do not drain the beans, do drain the corn if canned.)

Stir it up and add the taco mix.

Bring the soup up to a boil (do not boil more than a moment), cover and simmer for 1 hour.

Add browned ground beef or turkey. For a mexican flavor add strips of tortillas.

Weight Watchers Soup Recipes - Moroccan Chicken Soup with Saffron

Weight Watchers points: 4 per serving

Ingredients (for 4 servings):

1 serving cooking spray (5 one-second sprays per serving)
1 small onion(s), chopped
1 small sweet red pepper(s), chopped
1 medium garlic clove(s), minced
1 pound boneless, skinless chicken thigh(s), cut into bite-size pieces
1/4 tsp saffron
1/4 tsp ground cinnamon
1/8 tsp ground cumin
1/4 tsp table salt
1/4 tsp black pepper
1/8 tsp red pepper flakes, crushed
14 1/2 oz canned tomatoes, diced
1 1/4 cup fat-free chicken broth
3/4 cup cooked couscous, Israeli-variety

How to prepare the Moroccan Chicken Soup with Saffron:

Coat a nonstick pot with cooking spray.

Add onion, red pepper and garlic. Sauté, stirring frequently, for 5 minutes.

Add chicken and brown lightly on both sides, for about 4 minutes.

Stir in saffron, cinnamon, cumin, salt, pepper and red pepper flakes. Cook for 30 seconds.

Stir in diced tomatoes, broth and couscous.

Simmer until chicken is cooked through, for about 10 minutes.

The recipe is for about 1 1/4 cups per serving.

Weight Watchers Soup Recipes - Lentil and Ham Soup

Weight Watchers points: 5 per serving

Ingredients (for 8 servings):

4 tsp olive oil
2 cloves garlic, minced
3 qts vegetable broth
12 oz lentils
1 c each diced carrots, celery and onion
1 c tomato juice
8 c escarole, chopped
12 oz extra lean ham, diced
Salt to taste

How to prepare the Ham and Lentil Soup:

In a soup pot, saute garlic in oil.

Add broth and lentils. Bring to a boil, then reduce to simmer, cover and cook for 20 minutes.

Add celery, carrots, onion and tomato juice.

Cover and simmer for about 20 minutes.

Add escarole and ham. Cover and simmer for about 15 minutes more.

Weight Watchers Soup Recipes - Ferrare Carrot Soup

Weight Watchers points: 4 per serving

Ingredients (for 4 servings):

2 Tbsp olive oil
3 medium vidalia onions
1 medium leek
4 cup carrots
4 cup fat-free chicken broth
1 tsp curry powder
1/2 cup low-fat tofu
1/2 cup fat-free cream cheese
1 tsp table salt

How to prepare the Ferrare Carrot Soup:

In a Dutch oven or stock pot, heat the olive oil.

Add chopped onions and chopped leek. Sauté for 2 minutes.

Add the chopped carrots and sauté for 5 minutes, stiring frequently.

Add the stock and curry. Bring mixture to boiling.

Reduce heat and simmer, partially covered for about 10 or 15 minutes, or until the carrots are tender.

In a blender or food processor, puree the soup in batches with tofu and cream cheese until smooth.

Return soup to the pot, stir in salt.

Serve soup in hot bowls, garnished with chives and a dollop of sour cream, or chill the soup thoroughly and serve cold, garnished the same way.

Weight Watchers Soup Recipes - Creamy Broccoli Soup

Weight Watchers points: 1 per serving

Ingredients (for 12 servings):

32 oz frozen chopped broccoli
32 oz frozen cauliflower
4 cup water
8 oz Kraft Velveeta Light Reduced-Fat
Pasteurized Processed Cheese Product, cubed

How to prepare the Creamy Broccoli Soup:

In a large dutch oven, add frozen broccoli and cauliflower.

Add enough water to cover. Cook until very tender.

Do not drain. Add 8 oz. velveeta light, cubed.

Do not stir. Let sit about 5 minutes to melt.

Puree in blender until smooth. Salt and pepper to taste.

Weight Watchers Soup Recipes - Hashbrown Potato Soup

Weight Watchers points: 2 points per serving (1 cup each)

Ingredients (for 10 servings):

16 oz Ore Ida Style Hashbrowns
4 Cans FF low sodium chicken broth
1 envelope McCormick country gravy mix
1-2 onions chopped
1 clove garlic - minced

How to prepare the hashbrown potato soup:

Spray nonstick pan w/Pam and saute onion and garlic. Add hashbrowns & cook till tender.

Transfer to large stock pan.

Add 3 cans chicken broth and bring to boil. Add 4th can of broth and gravy mix, whisking gravy mix into soup.

Bring to a boil and simmer for a bit.
